Preheat the oven to 400°F.
Grease a small baking sheet.
In a bowl, combine buttermilk pancake mix and water.
Stir just until blended. Using a large spoon, drop dough onto a baking sheet.
Bake for 10 minutes or until golden brown.
Melt butter or heat vegetable oil in a small frying pan over medium high heat.
Add pancake mix, salt and pepper (optional).
Quickly whisk together making sure to stir continually over medium heat for about 10 minutes or until light brown.
Slowly whisk in milk a little at a time, whisking thoroughly to avoid lumps.
Stir until desired thickness is reached.
Spoon gravy over biscuits and serve.
