Preheat the oven to 425°F. Lightly grease a 9-inch pie plate. Prepare the crust by mixing pancake mix, butter and water until dough forms. Roll out dough and place on a pie plate. Set aside. In a medium saucepan, combine all filling ingredients and cook on medium heat for 15 to 20 minutes. Spoon cooled filling into crust-lined pie plate. In a medium bowl, combine all streusel topping ingredients together, stir until crumbly. Sprinkle streusel mixture over top of apple filling. Bake for 30 to 40 minutes. Makes 6 to 8 servings.
