Preheat the oven to 425°F. Prepare the crust by mixing together pancake mix and water until dough forms. Cover and allow the dough to rest for 5 minutes. Roll dough out onto a lightly floured surface (using additional pancake mix). Roll into a circle, about 1⁄16" thick. Place into a greased pie pan and set aside. In a saucepan, combine mashed potatoes, creamy potato soup, and water. Cook over medium high heat for about 5 minutes.Pour into the pie shell and bake for 20 to 25 minutes.
