Preheat oven to 375°F.
In large bowl, dissolve yeast in warm water.
Add bread mix, flour, eggs, salt, butter and potatoes. Knead until dough is smooth and elastic. If using electric mixer with dough hook, mix on 2nd speed for 10 to 20 minutes or to full development.
Cover with towel, let rest for 15 minutes.
Divide dough into 8 equal pieces, place into a well greased 9”x13” baking pan.
Cover, let rise until dough has doubled in size. Bake 12 to 15 minutes.
