Spinach Quiche



Preheat the oven to 375°F. Heat oil in a large skillet over medium-high heat, add onion and garlic. Cook until onions are soft. Stir in spinach. Remove from heat and allow to cool. In a separate bowl, combine eggs, milk, cream of wheat, salt and pepper. Mix well. Fold spinach mixture into egg mixture, add cheese. Pour into a greased 10-inch pie pan. Bake for 30 minutes or until the quiche is firm in the center. Allow to cool 10 minutes before serving. Makes approximately 8 servings.
