In a large skillet, heat oil over medium-high heat.
Add potato shreds, fry until browned. Remove from the pan, drain excess oil using a paper towel.
Crumble sausage into pan, add remaining ingredients. Cook until eggs are set.
Place potatoes in a bowl, top with scrambled egg mixture.
