Heat oil in a medium skillet over medium-high heat. Add potato slices, onions, peppers and sprinkle with salt. Cook until browned and crisp. In a separate bowl, whisk egg mix with water, mix well. Add bacon bits. Pour egg mixture over browned potato mixture, cook on medium-low heat until eggs are set. Top with cheese. Makes 3 cups.
