Preheat the oven to 375°F.
In a medium saucepan, combine corn chowder soup mix with water, bring to a boil.
Reduce heat to medium, simmer for an additional 5 minutes.
Pour into an 8”x8” baking dish.
Add cheese powder, stir to dissolve.
Stir in rice, stew blend, broccoli and 3/4 cup Colby cheese. Sprinkle remaining Colby cheese on top.
Bake for 30 minutes or until the cheese is melted and golden brown.
