In a large skillet, heat oil over medium-high heat. Add chicken, onions, carrots, peas, ginger, garlic and onion powder. Cook for 1 minute. Slide vegetables to one side of the pan, pour egg mix onto the cleared area.Scramble eggs then mix together with sautéed vegetables. Add rice. Drizzle soy sauce on top of fried rice. Fry until heated through and well combined. Makes 5 cups.
