Combine pancake mix with water and knead until a dough forms.
Allow to rest for 10 minutes.
On a lightly floured surface (use additional pancake mix), roll dough into a rectangle about 1⁄16" thick.
Cut dough into strips about 1⁄4" wide and 1" long.
Cover and set aside. In a saucepan, combine cream of chicken soup mix with water, bring to a boil.
Add noodles, reduce heat to medium and continue cooking for 5 minutes.
