Combine pancake mix with water and knead until a dough forms.
Allow to rest for 10 minutes. On a lightly floured surface (use additional pancake mix), roll dough into a rectangle about 1⁄16" thick.
Cut dough into strips about 1" wide and 1" long. Cover and set aside.
In a saucepan, combine soup ingredients together.
Bring to a boil, reduce heat to medium, and continue cooking for 15 minutes.
Add noodles to the soup mixture and continue cooking for an additional 5 minutes.
