On-the-Go Breakfast Cups

Instructions:

Preheat the oven to 400°F. 

    Dough:

    In a large bowl, stir together pancake mix, butter and water until dough forms. On a lightly floured surface, knead dough 15 to 30 seconds, about 10 times. Roll dough to 1/2-inch thickness, cut out circles with a 2-inch biscuit cutter. Gently press 1 dough circle into greased muffin tin cups, set aside.

      Filling: 

      In a large mixing bowl, whisk together egg powder, onions, peppers, cheese and water. Pour 1/3 cup filling mixture over dough in each muffin tin cup. Top each muffin tin cup with an additional dough circle. Bake for 15 to 20 minutes.
        Makes 12 muffins.
