Ingredients:

Pudding for Filling:

  • ⅓ cup vanilla pudding mix
  • ½ cup water

Filling:

Dough:

Honey Glaze:

  • 2 tbsp Honey Powder
  • 1 tsp Hot water

Instructions:

Preheat the oven to 425°F. In a small bowl, combine pudding with water, mix well. Set aside. Combine apple slices and honey powder with water, heat over medium heat until softened, about 10 minutes. Whisk in pancake mix and continue cooking until thickened. Once apple filling has thickened, remove from heat to cool. Once cooled, stir in prepared vanilla pudding. In a separate bowl, combine pancake mix and honey powder.Stir in water until absorbed. Dough will be stiff and slightly dry. Turn dough out onto a floured surface (use additional pancake mix). Knead for about 3 minutes until a solid dough begins to form. Divide into evenly-sized balls of dough, allow to rest for 10 minutes. Roll each ball of dough into equal sized squares. In a small bowl, combine honey powder with hot water, set aside. Place an equal amount of apple filling on one side of each square.Slightly moisten sides of dough, fold over filling, and seal edges with a fork. Bake for 15 minutes. Brush baked tarts with honey glaze. Return to the oven and bake for an additional 4 minutes or until edges are lightly browned.
