Mashed Potatoes Cake
- 1/2 cup Augason Farms Buttermilk Pancake Mix
- 3/4 cup Augason Farms Dehydrated Potato Gems
- 2/3 cup Augason Farms Freeze Dried Shredded Colby Cheese, rehydrated
- 1/4 teaspoon ground black pepper
- 1/4 teaspoon salt
- 1 cup water
Set aside 1/4 cup pancake mix. In a medium bowl, stir together remaining ingredients. Let stand for 5 minutes. Once the mixture is slightly firm, make 2-inch balls then flatten to approximately 1/2-inch thick. Coat outside of potato cakes with remaining pancake mix. Fry in a lightly oiled skillet until dark golden brown. Makes 4 potato cakes.
