In large bowl, whisk together all ingredients until smooth.
Heat a 12-inch skillet over medium-high heat. Lightly coat with oil.
Scoop 3 tablespoons of batter into pan.
Swirl pan to spread batter as thin as possible making a circle about 6 inches wide.
Cook 1 to 2 minutes per side. Enjoy as is or serve wrapped with sweet or savory fillings.
