In a deep skillet, heat 1 inch of vegetable oil to 375°F. Combine water and pancake mix in a small mixing bowl. In a separate bowl, combine sugar and cinnamon, set aside. Pour batter into a pastry bag. Pipe 5-inch strips of batter into hot oil, keeping hands a safe distance from oil. Fry until golden brown. Drain on paper towels. While warm, roll in cinnamon-sugar mixture to coat. Makes 8 to10 churros.
