Rinse beans. Add beans to boiling water. Boil for 2 minutes and let stand for 1 hour.
Cover and slowly cook on medium heat until beans are tender, about 2 hours.
Add more water if necessary. Mash rehydrated beans and season to taste. In a small saucepan, whisk soup, mix into water and bring to a boil.
Reduce heat to medium and continue cooking for 20 minutes or until gravy reaches desired consistency.
Stir occasionally. In a large serving bowl, combine mashed potatoes with hot water.
Stir mashed pinto beans into mashed potatoes and top with gravy.
