Bean Burritos

Ingredients:

6 burritos

Filling:

  • 1 cup pinto beans
  • 3 cups water

Tortillas:


Instructions:

Rinse beans. Add beans to boiling water. Boil for 2 minutes and let stand for 1 hour. Cover and slowly cook on medium heat until beans are tender, about 2 hours. Add more water if necessary. Mash rehydrated beans and season to taste. Combine buttermilk pancake mix with water and knead together until smooth. Separate dough into equal sized balls. Cover and let rest 15 minutes. Roll dough out into 6 to 7 inch rounds. Cook tortillas on a preheated greased skillet for about 2 minutes per side. Fill tortillas with beans, fold and serve.
