Heat oil in a medium skillet over medium-high heat.
Add chopped onions and peppers, cook until softened, set aside.
In a small bowl combine egg mix and water, mix well.
Add taco meat and egg mix to onions and peppers.
Stir together until eggs are cooked. If Desired, garnish with cilantro and serve with corn chips or corn bread.
